Beatrice "Peppy" Applebaum

–

Minnetonka, Minnesota

Beatrice L. "Peppy" Applebaum, of Minnetonka, passed away peacefully at age 94 with family at her bedside and was reunited with the love of her life on June 4th, 2017. Preceded in death by her husband, Eddie; mother and father, Eva and Ben London; sisters, Anne E Mappa (London) and Mary London and her brother, Morris London. Survived by her son and daughter-in-law, George and Joanne Applebaum; grandchildren, Ben (Gena) Applebaum, Jessica (Viet Pham) Applebaum; step-granddaughter, Julie (Trapper) Bowers; great grandsons, Henry and Leo Applebaum and Everett Bowers. Born in Duluth, MN on April 15, 1923, she was the youngest of four siblings, the older of whom all took great care in protecting their baby sister. Growing up, she quickly earned the nickname “Peppy”, a name that forever stayed with her as it perfectly described her energy, sass and zest for life. She met her husband and soul mate as a teenager while he was visiting some friends in her hometown. After graduating high school, Peppy moved to Minneapolis to work and be closer to Ed as they began courting each other. After Ed returned from the war, they were married and raised their family in St. Louis Park. Peppy was somewhat of a pioneer, as she worked full time outside of the home in the 1950’s as the office manager of a trucking company that she and Ed owned. After selling their successful business in the early 1980’s, they were able to split their time between Minneapolis and their home in Florida and traveled extensively. To Peppy, the most important thing in her life was her family. She and Ed spent vast amounts of time with their grandchildren taking them on trips from Disney World to the Black Hills, and all points between. The family would like to thank the entire staff at Abbott Northwestern E3000 for their compassionate care during her last week. Funeral service WEDNESDAY, JUNE 7th at 2:00 PM, BET SHALOM CONGREGATION, 13613 Orchard Road, Minnetonka. Memorials preferred to JFCS or donor’s favorite charity. SHIVA at Bet Shalom Congregation, Wednesday evening 7 pm.
